Coffee Cake Muffins {dairy, gluten + egg free}

Prior to Easter, I was super ambitious and had planned to share all of our brunch recipes before "the" day. But the hustle and excitement that naturally comes with holidays caused me to fall a little bit behind. The silver lining is that the recipes are absolutely perfect for any day of the week!

When I was a kid, my mom made the BEST coffee cake, mostly on the occasional Sunday morning. It was fluffy and warm with just the right amount of sweet brown sugar topping. I've wanted to recreate it forever. These coffee cake muffins are perfectly soft, not too sweet, and topped with a warm cinnamon sugar crumble. Enjoy them straight from the oven or reheat them for a quick on-the-go breakfast.

Coffee Cake Muffins {dairy, gluten + egg free}

(Makes about 8-10 muffins)


  • 1 1/2 cups gluten free all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp xanthan gum
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 cup unsweetened applesauce 
  • 1/2 cup real maple syrup 
  • 1/4 cup dairy-free sour cream or plain dairy-free yogurt
  • 1/4 cup canola oil
  • 1 Tbsp apple cider vinegar
  • 1 tsp vanilla

Streusel topping:

  • 2 Tbsp brown sugar
  • 1 Tbsp gluten free all purpose flour
  • 1 Tbsp dairy free butter, softened
  • 1 tsp cinnamon

Glaze:

  • 1/2 cup powdered sugar
  • 2 Tbsp dairy-free milk or water
  • 1/4 tsp vanilla
  • Pinch of salt

Preheat oven to 350 degrees. Line muffin pan with paper liners; set aside. 

In a small bowl, combine the streusel ingredients, using a fork to mix until small clumps form. Set aside. 

In a large mixing bowl, whisk together the dry ingredients. Once combined, with the mixer on low speed, add the applesauce, syrup, sour cream, oil, vinegar and vanilla one at a time. 

Once thoroughly mixed, scoop batter into muffin liners. Top with the streusel mixture. Bake for 18-20 minutes.

Allow to cool. Drizzle with glaze and serve warm.
