Fiesta Grilled Chicken {top 8 + gluten free}

As a working mom, I hold myself responsible for making sure the daily lives of my kids (and our family as a whole) run smoothly - from getting to school and work on time to making it to every soccer practice, baseball game and after school activity. When I am able to get a fresh, healthy meal on the table, I feel as though I have accomplished a near-impossible feat. (Maybe I am being a little dramatic, but when you add food allergies and restricted diets to the mix, it is an even bigger task!) I need an arsenal of quick, dairy- and gluten-free recipes that the whole family can enjoy, because I refuse to make different meals for everyone, especially on a week night!

I shop at my local Sam’s Club store frequently, where I can always find great deals on allergy-friendly items like quinoa, coconut oil, and real maple syrup. I am thrilled each time I discover another product at Sam's Club that fits into our dairy-free, gluten-free lifestyle. In fact, I just picked up a bag of Tyson Gluten Free Grilled & Ready Chicken in the frozen foods section and attended an in-store demo of the product at my store on March 15th!

I love to cook, and recreating recipes that remind me of some of my favorite restaurant meals is a fun challenge. On the rare occasions when we do go out for dinner, Mexican food is the first choice. While I have a slightly easier time finding gluten-free options for myself, the severity of Mason's dairy allergy prevents him from being able to safely eat foods prepared in a restaurant. (We don't take chances - there is too much room for error and cross-contamination...and this Mama doesn't trust too many people when it comes to feeding my boy.) I am on a mission to help my little man feel like he isn't missing out on anything when we do go out. He can have a delicious, 100% "safe for him" version made by mom!

As soon as I purchased Tyson Gluten Free Grilled & Ready Chicken, I knew exactly what I wanted to make with it. I knew that the pre-grilled chicken would save me tons of time and to be honest, I am not the greatest when it comes to grilling chicken. It nearly always turns out dry and tough, if not burnt!

For this recipe, I allowed the chicken breast fillets to thaw in the refrigerator overnight so they would be ready for me to use for dinner. I was so happy to find these fillets were incredibly moist and tender! I decided to dice the chicken and season it with the same spices I use in my homemade taco seasoning. Isn't it great when you know exactly what is going into your food?! We added sides of Lime Rice, Seasoned Black Beans, and corn, plus some delicious toppings. Fiesta Grilled Chicken {top 8 + gluten free}                                                                     

Chicken:     

  • 6 Tyson Gluten Free Grilled & Ready chicken breast fillets, thawed and diced
  • 2 Tbsp olive oil
  • 2 tsp mild chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1-2 Tbsp water

In a large skillet, heat the olive oil on medium heat. Once the oil is hot, add the diced chicken. Stir to lightly coat the chicken in the oil.

In a small bowl, combine all of the spices. Sprinkle the mixture over the chicken. Add 1-2 Tbsp of water and mix to coat the chicken with spices. Once the water begins to boil, turn the heat down to low and simmer for 5-7 minutes or until the chicken is heated through and most of the water has evaporated.

Lime Rice:
1 Tbsp olive oil
1 cup Basmati rice 
Juice of one lime
1 1/2 cups water
1/2 tsp salt
2 tsp fresh cilantro, chopped

In a saucepan, heat the olive oil on medium heat. Add the rice and lime juice. Stir for one minute or until the rice becomes translucent. Add the water and salt. Bring to a rolling boil. Once boiling, turn the heat to low and cover. Leave the lid on for 20-25 minutes or until the water is absorbed. Fluff with a fork and stir in the cilantro before serving.

Seasoned Black Beans:
1 can black beans, undrained
1 clove garlic, minced
1 tsp chili powder
1/2 tsp cumin
1/2 tsp salt
1/4 tsp brown sugar

Combine all of the ingredients in a small saucepan over medium heat. Once bubbling, turn heat to low and simmer for 5-7 minutes.

Layer the rice, black beans and chicken in a bowl or on a plate. Add toppings such as shredded lettuce, sliced onions, avocado, salsa, corn, cheese (dairy-free or regular), sour cream (dairy-free or regular), cilantro and a squeeze of lime. You could also roll everything up in a gluten-free tortilla. Serve alongside some margaritas, chips and guacamole for a delicious fiesta in your own kitchen!
