Pumpkin Pie Overnight Oats {gluten free + vegan}

I used to be a morning person. Mainly when Mason was a baby and I didn't sleep much anyway. I would wake up at 4 or 5 in the morning every day, make a healthy breakfast, watch morning news shows, get all of our 58 bags together for work, daycare, etc., and still have plenty of time to cuddle with my babe before heading out the door.

Now that I have a 5 1/2 year old and have rediscovered how much I love my sleep, our mornings are slightly more hectic. Thankfully we live right next to our school, but I also have about a 20 minute drive to work each morning. If I don't pack everything we need the night before, there's a really good chance something will be forgotten.

Packing the boy's lunch has always been a priority. I used to pack a week's worth of his meals on Sundays. Now I just pack them after dinner the evening before while we're doing dishes and cleaning up the kitchen. Since adjusting my own dietary needs over 18 months ago, I also pack my own lunch every day, along with my gym bag and Mason's backpack. As you can probably imagine, this doesn't leave a lot of time for breakfast.

My favorite quick breakfast is overnight oats. I like to mix up the flavors once in awhile and they are good warm or straight from the fridge. Since it's now officially fall, I am loving these Pumpkin Pie Overnight Oats!

Pumpkin Pie Overnight Oats {gluten free + vegan}


  • 1/3 cup certified gluten free quick cooking oats
  • 1/4 cup pumpkin puree
  • 1 Tbsp chia seeds (optional)
  • 1 tsp maple syrup
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • pinch of salt
  • 1/2 cup almond milk (or other dairy free milk)


Optional toppings:



Add all ingredients to a glass jar. (I use pint-sized Mason jars or empty jelly jars.) Place the lid on the jar tightly and shake well to mix. Place in the refrigerator overnight.

In the morning, oats can be eaten straight from the jar, or pour them into a microwave-safe bowl, add optional toppings and warm in the microwave for 30 seconds.
