Broccoli Salad {gluten free + vegan}

One of my favorite things to do during the summer is grilling out with friends. Of course, tons of food is always involved. I love to lighted things up with a cold summer veggie salad. This dressing is one of my favorites as well. It is perfectly sweet and tangy, creamy and delicious. It is amazingly versatile too. You can use just broccoli and onion, or add other vegetables like cold peas, cauliflower, or cherry tomatoes. Topping with cooked, crumbled bacon, or shredded dairy-free or regular cheese before serving would be delicious too!

Using egg-free mayo makes it easy to take along and not have to worry about keeping it super cold before serving. This broccoli salad is my favorite side dish for just about any meal. It is even better after a day or two in the fridge when the broccoli softens a little and all of the flavors meld. Mmmm. 

Broccoli Salad {gluten free + vegan}

3-4 broccoli crowns, chopped into bite-sized pieces
1/4 cup white onion, diced
1 cup egg-free mayonnaise (Just Mayo is delicious, or use regular mayo if eggs are okay for you)
2 Tbsp apple cider vinegar
2 Tbsp sugar

In a medium bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until well combined. Add the onion and broccoli and fold until vegetables are coated with dressing. Refrigerate until ready to serve.
