Battered Onion Rings {gluten free + vegan}

When I made my dairy- & gluten-free battered fish tacos, I stated in the recipe that you could also use the batter for onion rings. Here is how! Obviously they're not the healthiest food around but sometimes it is nice to be able to indulge in a special treat!

Battered Onion Rings {gluten free + vegan}

  • 1 large or 2 small white or Vidalia onions
  • 1 cup gluten free all purpose flour
  • 1/4 cup corn or tapioca starch
  • 1 Tbsp garlic salt
  • 2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups water (you may not use all of this, depending on your batter consistency)
  • Oil for frying (I have used both canola and vegetable oil; make sure whatever you use has a high smoke point so it doesn't burn while you're frying)

Add enough oil to a pot to fill it about 2-3 inches deep. Place on medium-high heat. Line a cooling rack or baking sheet with paper towels; set aside.

While the oil is heating, slice your onions. I sliced mine in about 1/2 inch thick slices. Pull the layers apart, keeping them in a ring shape. Place onions in a bowl and coat lightly with corn or tapioca starch.

In another bowl, whisk together flour and spices. Gradually add water while whisking until the batter reaches the consistency of a thin pancake batter.

Once the oil is hot, coat a few onion slices at a time in the batter and carefully drop them into the oil. Using metal tongs, flip the rings once or twice to cook evenly on both sides (about two minutes). When lightly browned, remove from oil and place on the paper towels to remove excess oil. (Watch closely as it doesn't take long to burn them.)

Sprinkle lightly with salt, Old Bay, or other seasoning while still hot. Continue until all rings are cooked.
