Chicken Caesar Sandwiches {Dairy, Egg & Gluten Free}

I wanted to make something quick and easy on this rainy, cool Saturday. I found a recipe on Pinterest for Slow Cooker Caesar Chicken Sandwiches from Chef In Training. They looked delicious, but like most Caesar-anything, they called for Parmesan cheese. Caesar salad dressing traditionally contains Parmesan as well. So began my search for Caesar dressing recipes that don't contain milk/cheese, etc.



I found several recipes and combined bits and pieces of each until I came up with one I liked. I also left out the parm from the original recipe. If you don't have dairy issues, add it. I'm sure it would be delicious. You could even add some Go Veggie Foods Dairy Free Parmesan Style Topping if you want to. I think the dressing is delicious with or without it.

As for the chicken, you could cook up a pound of chicken in any manner you choose. The original recipe called for slow cooking one pound of chicken breasts for about 3 hours, then shredding it. I prefer to purchase a pre-cooked rotisserie chicken from my local grocery store (make sure it doesn't contain your allergens and beware of cross contamination before buying). I trust their cooking methods and the chicken falls right off the bones. I shred or chop the chicken into bite-size pieces to use in this recipe and many others. Save the bones and "extra" pieces to make homemade chicken stock too!

Chicken Caesar Sandwiches {Dairy, Egg & Gluten Free}

1 lb chicken, cooked, cooled, and shredded or chopped
1/2 cup of Caesar salad dressing (recipe below)
1 handful baby spring lettuce mix or spinach (optional)
4-6 buns (I use Udi's Gluten Free hamburger buns)

Spread a generous helping of the Caesar dressing on each hamburger bun. Top with lettuce, then chicken. Serve immediately. We love to have my fresh Broccoli Salad and sweet potato fries for sides.

Caesar Dressing {Gluten Free & Vegan}

1/4 cup egg-free mayonnaise (I like Just Mayo)
2 Tbsp Dijon mustard
1 Tbsp Tamari (gluten-free soy sauce)
1 tsp lemon juice
1 tsp garlic powder
salt & pepper to taste

Whisk all ingredients together in a small bowl. Refrigerate until ready to use.
